Pork Boudin is a type of Cajun sausage made from a pork
rice dressing wrapped in a pork skin casing. Pork Boudin
is usually eaten by squeezing the stuffing out of one
end. Fried pork skins (Cracklins) or Saltine crackers
are a popular accompaniment.
Pork Boudin can be served as a meal or appetizer and
goes great with a cold beer!

In preparing our sausages we start with the finest selection of ingredients available & then add a blend of seasoning to creating an authentic Cajun flavor. Although some of the sausages are not specifically Cajun, they are made with the finest selection of ingredients to produce their own unique flavors. The mixture is stuffed into a natural hog casing & vacuum packaged preserving flavor and freshness. These are meat sausages and are packed 5 Links per package.
As you can see from the list we make a variety of sausages including what is commonly called green onion sausage or gumbo sausage. These are very good in creating authentic Cajun dishes but are also great grilled or smothered.
