SEASONING
Our sausage mixes contain everything except the meat.  Each packet is pre-measured to season a specific amount of meat.  Packets may be divided proportionally for smaller amounts of meat.
 
 
Deer or Venison Sausage
Venison is a very lean meat with little fat.  In making venison sausage, use a higer percentage of pork fat and trim to the venison to act as a tenderizer and to provide juices that will enhance flavor.  Any of Merits  sausage mixes can be used with venison.
